Primitivo di Manduria

Primitivo di Manduria is once again ranked as a top Italian red wine. This dark-skinned grape is used to make an intense, inky tannic red wine. The flat clayey and calcareous terrain, and the hot dry climate, enable this grape to develop, ripen and mature, creating a mouth-feel that is full, smooth and silky. The grapes are hand-picked, destemmed and after crushing, go through a 7 day maceration at 25-26C the a period of malolactic fermentation. Aged in stainless steel tanks until bottled.
On the nose: Luxurious perfume of ripe cherries, blackberries and plum with pleasant notes of chocolate and vanilla, wild berries jam, violet and pepper
On the palate: Remarkable structure, and soft thanks to the presence of sweet tannins, with a long, warm finish. High acidity and a full, rounded body.
Recommended combination with food: Perfect with roast pork in crust, wild boar alla cacciatora. Traditionally: meat stew, lamb with baked potatoes

The history of this wine goes back a long way, dating back to the ancient Romans and the famous wine called “Retico” which was so highly praised and enjoyed by Latin poets.
Today, known as Recioto, the wine is symbolic of the viticulture of Valpolicella Classico; a wine produced after “Appassimento”, or natural drying and shrivelling of the grapes, and it is also considered to be the origin of the world famous Amarone as we know it.

Sangiovese grapes the most widely planted variety in Italy. Thin skinned, late ripening extends the growing season making for richer, stronger, longer lived wines. It’s hand picked, soft pressed, the must ferments in stainless steel tanks on the skins for 20 days, then 50% of the wine matures in French oak barriques and 50% in cement tanks for 12 months, followed by a further 3 months in bottle before release. The wine is smooth, fruit-rich, and delicious, with supple, well-balanced tannins.
On the nose: Violets, black cherries, plum and earthy spice
On the palate: remarkable structure, soft thanks to the presence of refined tannins, with a long, warm finish. High acidity full body, toast, sage and black currants with hints of bitter almonds and aftertastes of chocolate
Recommended combination with food: Perfect with Lamb, Pappardelle pasta with rabbit and porcini mushroom ragu, fried chicken liver, slow-roasted pork

Torre Zambra Montepulciano d’Abruzzo

Montepulciano d’Abruzzo “Colle Maggio” attracts appreciative glances thanks to its impenetrable pitch black hue, an enchanting deep colour. The wine is made with rigorously selected grapes from the Colle Maggio hillside in Villamagna south of Pescara on the east coast, at an altitude of about 200 metres above sea level. The grapes are picked by hand and collected in small wooden crates in the first ten days of October. Once in the cellars, the long maceration in steel tanks at controlled temperature with natural yeasts for 45 days, guarantees to extract all the colour from the skins. The wines then mature for six months in concrete vats, for a further eight months in French and Slavonian oak barrels (20% in first-passage oaks and 80% in second-passage) and finally for four months in the bottle.
On the nose: wild berries, ripe clack cherries, blackberries and plum with pleasant notes of cocoa, coffee and tobacco
On the palate: remarkable structure, soft thanks to the presence of refined tannins, with a long, warm finish. High acidity full body, with hints of bitter almonds and aftertastes of chocolate
Recommended combination with food: Perfect with BBQ meats, game meats, lamb ribs in pistachio crust

Verdeca Salento

Verdeca is a relatively rare white wine grape variety from southern Italy, now found almost exclusively in the Taranto and Bari provinces of central Puglia (it is easily confused with the similarly named Verdea, an equally rare variety from Tuscany). While it is typically used as a blending grape there are a handful of modern producers who are experimenting with varietal Verdeca wines in order to raise its profile – generally speaking, it is difficult to make a great wine from 100% Verdeca.
On the nose: Its bouquet is surprisingly intense and fine with a scent of apricot, flowers and rosemary
On the palate: its balance between freshness, sapidity and alcoholic tenor is perfect. Lovely and persistent, the citrusy and lightly balsamic final creates harmony to the taste
Recommended combination with food: It pairs best with light risotto, buffalo mozzarella cheese, or more traditionally “pancotto” with vegetables, orecchiette with turnip greens, puccia with onions and even olives.
