The best grapes are hand selected from three Cru vineyards (Calcarole, Pojega and Rovereti) then semi-dried to extract the water and leave the rich sugary ripeness. At the heart of the Valpolicella Classico is the 100% dried Corvina and Corvinone grapes, that have been raisined in the drying rooms for 3 ½ months. Long slow fermentation of one month (20°C to 25°C) followed by malolactic fermentation in oak with further 36 months in oak then 12-24 months in the bottle. The resulting wine has a distinct black pepper and dark cherry character to the which is medium-bodied, structured but smooth and with a complex savoury finish.
Recommended combination with food: roasted or braised beef/lamb or game, beef stroganoff, curry based dishes or cheeses such as Parmigiano-Reggiano
