    Corvée was a French term used in the Middle-Ages to describe the activities and work of the Vassals, who would work on the land of superiors for free in return of shelter and protection. This is how 400 Km of terraced cultivations originated in Val di Cembria.

     On the nose:  The aroma is decisively floral and reminiscent of white flowers as well as fresh apple and pear.

     On the palate:  Apples and pears, with a striking tartness and well rounded acidity. Great body and hints of tropical fruits

     Recommended combination with food:  A great partner for:

    • Montasio cheese tart (“frico friulano”)
    • Thin-sliced octopus drizzled with sudachi
    • Prawns steamed in banana leaves

    Serve at 8-10°C

    The word “Zibibbo” is derived from the Arabic word ‘zabib’ meaning raisins. The wine was originally from Egypt and was introduced by the Phoenicians when they landed in Pantelleria, a tiny island situated between mainland Sicily and the northern tip of Africa. Over time, vines of Zibibbo were planted in mainland Sicily, namely in the famous area of Marsala for its very similar terrain and geometry. The grapes have similar aromatics to that of Moscato but are left on the vine until slightly shriveled (a sign of partial fermentation) and then are left to dry in the sun. The result is an elegant and harmonious dessert wine that is the ideal accompaniment for typical Sicilian cakes, especially those with a ricotta cream base.

    • Ice cream and fruit desserts

    Bornemissza Gergely was an officer in the Hungarian army famed for his inventive use of explosives. This wine is part of the Historic Grand Selection Collection, commemorating the Siege of Eger 1552.  It was here that the legend of the “Bulls’ Blood” originated. This wine is not made every year, only in perfect vintages.  The last vintage prior to this 2016 was 2011 which won a Sommelier Wine Award medal in 2017. A full bodied kekfrankos from the North East of the country with depth and rich smooth tannins.

    On the nose: A combination of deep dark fruits, with warm engaging aromas of cocoa and licorice

    On the palate: A full body with black peppery touch of spice, figs, blackcurrant and raisins.

    Recommended combination with food: Ideal with stewed hare, lentil soup with smoked ham hock, roast beef

    Serve at 18°C

    From the famed Terre de la Custodia vineyard, this wine is steeped in history.  The original vines were planted by Franciscan monks, who kept the secrets of the wine making in their cloisters, where the name “Custodia” originates.  This fabulous wine oozes character and flavours.  Made from 100% Grechetto grapes, it is enhanced by a small amount of oak fermentation and malolactic fermentation, then undergoes further ageing on the lees to create a wonderful combination of fruit, butteriness and white stone fruit flavours.

    Torbato is a grape variety with very ancient origins that is now grown only by Sella&Mosca. The vineyards are situated in the “Terre Bianche” area, which is named after the chalky soils derived from age-old marine sediment in the northwest corner of Sardegna. Pale straw yellow in colour with lovely golden hues.  This is a complex and well orchestrated wine, with fruity hints and characteristic varietal notes.  A smooth white wine that goes with many dishes.

    Pairing: a perfect match for pasta and bread dishes, hard cheese, white, roasted fish.

  • Cannonau Di Sardegna DOC

    This best-known Sardinian red grape variety is grown in the south-eastern corner of the Sella&Mosca estate in the Alghero region in the north east part of the island, exposed to the north-easterly winds.  Late ripening grape full of deep red fruit flavours, this wine is fermented in temperature-controlled vats on the skins.  It is then part aged in oak and reblended to give the final wine lovely violet, rose and cherry notes with a hint of spice.

    Pairing: best served with roasts, braised red meats, strong cheeses, cooked tomatoes and aubergines.

    Another from the famed Terre de la Custodia vineyard, this 2013 vintage is bursting with flavours, tannins and character.  Made from 70% Sangiovese grapes, 15% Montepulciano and 15% Sagrantino, this wine is full of flavours, depth and colour.  The post fermentation skin contact, followed by 8 months of oak ageing gives this wine a Barolo style body without the price tag.

    Pairing: best served with game, venison, pork and braised beef.

    Clear and vivid ruby in colour.  An intense floral bouquet with violet and iris aromas.  The tannins are well integrated with the freshness of fruit make for a Chianti Classico with moderate ageability.  Aged for 9 months in barrique and a minimum of 3 months in the bottle. This wine makes an ideal accompaniment to grilled or roasted red meats, cured meats, game meats and medium-aged cheeses.
