This best-known Sardinian red grape variety is grown in the south-eastern corner of the Sella&Mosca estate in the Alghero region in the north east part of the island, exposed to the north-easterly winds. Late ripening grape full of deep red fruit flavours, this wine is fermented in temperature controlled vats on the skins. It is then part aged in oak and reblended to give the final wine lovely violet, rose and cherry notes with a hint of spice.
Pairing: best served with roasts, braised red meats, strong cheeses, cooked tomatoes and aubergines.
