In production of this Refosco the maceration of the grape skins lasts roughly ten days, and then, once malolactic fermentation is complete, some of the wine is racked into French oak barriques, to be blended with the remainder. The combined wine is then aged in steel vats, after maturation.
On the nose: Broad, lingering aromas, hinting at Parma violets and red berry fruits. On the palate: Intense, persistent flavour is perked up by attractively husky tannins and a varietal twist of bitterness on the finish.Recommended combination with food: A perfect match for:
- Beef bourguignon
- Moussaka
- Braised beef cheek with chilli and lime
Serve at 16 – 18°C
